The basic physicochemical, microbiological and organoleptical properties of hard cheeses with low temperature of the second heating in ripening process depending on the temperature conditions of cheese curd processing were investigated. The optimal temperature conditions of cheese grain processing in production of hard cheeses with low temperature of the second heating with speeded ripening process were identified.
