The study presents the most important quality parameters of Bulgarian rape (Brassica napus) honey (n=10), harvested from apiaries with 50 to 200 combs near the villages Vinarovo, Lovets, Kozarevets and Kravino, region of Stara Zagora, Bulgaria. For the first time, data for specific optical rotation: (–) 12 0.8164 [α]D20 are reported. Organoleptic parameters, pollen analysis, pH, free acidity, invertase activity, electrical conductivity, diastase activity, water content and hydroxymethylfurfurol are also discussed. Further research on the quantity of glucose and fructose, as well as sucrose in this type Bulgarian bee honey is recommended.
