Ensiling process from the view of the silage microflora and the occurence of biogenic amines in the silage

Ensiling is a crop preservation method based on a rapid acidification of raw materials natural lactic acid fermentation under anaerobic conditios. Silage is a source of high nutritional value and high fiber content for feeding of ruminants, especially during winter period. On the other hand, silage contains also toxic and harmfull compounds such as biogenic amines and mycotoxins. Putrescine, cadaverine and tyramine are the main biogenic amines detect in silages. This paper summarizes the present existing information concerning silage processing, the role of desirable organisms such as lactic acid bacteria and undesirable microorganisms such as yeasts, pathogenic and spoilage bacteria and molds have been found in silage and the occurence of biogenic amines in different types of silages. Preservatives effect of bacterial inoculants is also discussed in this paper.
