Influence of heat treatment on aroma formation in flour of wheat germs | Влияние термической обработки на формирование аромата муки зародышей пшеницы

russe. Известно, что мука зародышей пшеницы (МЗП) благодаря высокой пищевой ценности может использоваться при производстве кондитерских изделий в качестве заменителя орехов. При этом возникает проблема формирования аромата орехов в конечном продукте. Влияние термической обработки на формирование аромата МЗП изучали с применением пьезосорбционного "электронного носа". Было отобрано 5 проб, которые обжаривали при 150 град. С в течение 0 (контроль), 3,5; 6,5; 1,5 и 12,5 мин. Установлено различное содержание легколетучих органических соединений в равновесной газовой фазе (РГФ) над пробами в зависимости от продолжительности обжарки: больше всего их было в аромате пробы 2, наименьшее – в пробах 1 и 4. По интенсивности аромата или содержанию отдельных классов легколетучих соединений пробы отличались от пробы-стандарта. Установлено по откликам отдельных сенсоров, что в РГФ над образцами содержатся гидрофильные соединения и вода, существенно содержание азотсодержащих и специфических (ароматических) соединений, сложных эфиров. В большей степени изменяется качественный состав РГФ для проб 3 и 4 в сравнении с пробой-стандартом. При этом для проб 3, 4, 5 увеличивается содержание сильнополярных летучих соединений (в том числе кетоны, спирты), уменьшается содержание сложных эфиров, кислот. По соотношению отдельных классов соединений в РГФ установлено заметное влияние продолжительности термической обработки на перераспределение соединений РГФ для МЗП. Таким образом, продолжительность термической обработки влияет на аромат МЗП. Установлен оптимальный режим термической обработки МЗП, при котором формируется "ореховый" аромат: продолжительность - от 6,5 до 10,5 мин, температура - 150 град. С.

anglais. Due to a high nutritional value a flour of wheat germs is known to be used in the production of confectionary products as a nut replacer. At the same time, there is a problem of creating a nut aroma in the end product. The effect of heat treatment on the formation of aroma in the flour of wheat germs was investigated with the use of a piezo-sorption "electronic nose". Five samples were selected, which samples were roasted at 150 degrees Сfor 0 (control), 3.5; 6.5; 1.5 and 12.5 min. The content of easily volatile organic compounds in an equilibrium gas phase over samples varied depending on the duration of the roast: the content in aroma of sample 2 was the highest, that in aroma of samples 1 and 4was the lowest. The samples differed from the standard sample in aroma intensity or the content of individual classes of easily volatile compounds. Responses of individual sensors showed that the equilibrium gas phase over samples contained hydrophilic compounds and water, there was a significant content of nitrogen-containing and specific (aromatic) compounds and esters. The maximal deviations were recorded in the qualitative composition of the equilibrium gas phase for samples 3 and 4 with reference to the standard sample. So, for samples 3, 4 and 5 the content of high-polar volatile compounds (including ketones, alcohols)increased, while the content of esters and acids decreased. The ratio of individual classes of compounds in the equilibrium gas phase showed a marked effect of a time of heat treatment on the redistribution of compounds in the equilibrium gas phase for flour of wheat germs. Thus, the duration of heat treatment influences aroma of flour of wheat germs. The results allowed determining an optimal heat treatment regime for the flour of wheat germs at which "nut" aroma is formed: from 6.5 to 10.5 min. at the temperature of 150 degrees C.
