The investigation of lipophilic antioxidants of fruit and berry crops as the basis of development of biological active food additives

Development of effective preparations aimed on correction of food chemical composition and representing medicinal and prophylactic substances for additional therapy appear a serious scientific challenge. Medicinal plants, filamentous fungi, fruits and berries content complexes of biologically active substances, especially carotenoids, tocopherols and essential fatty acids, directly influencing metabolic processes. The main goal of the research presented in the article appears development of the technologies for the creation of ecologically safe preparations and food additives containing natural complexes of biologically active substances. The study of some antioxidant compounds of fruits and berries of cultivated and wild species has allowed to develop a method for producing complex, environmentally safe dietary supplements, including a two-stage extraction and the emulsification process, which achieves the union as part of a single substance of lipophilic and hydrophilic bioactive compounds. This method makes it possible to obtain useful for the human and animal food additives and makes better use of valuable components of fruits and leaves of plants.

Исследование состава некоторых антиоксидантных соединений плодов и ягод культурных и дикорастущих видов позволило разработать способ получения комплексных, экологически безопасных биологически активных добавок, включающий два этапа экстракции и процесс эмульгирования, благодаря которому достигается объединение в составе единой субстанции липофильных и гидрофильных биологически активных соединений. Данный способ позволяет получать полезные для организма человека и животных пищевые добавки и более полно использовать ценные компоненты плодов и листьев растений.
