russe. Проведён сравнительный анализ содержания аминокислот в образцах длиннейшей мышцы спины чистопородного молодняка свиней различных генотипов. Установлено, что наивысшим содержанием незаменимых аминокислот отличалось мясо молодняка белорусской черно-пестрой породы, а заменимых – ландрас. Наивысшим содержанием треонина, лейцина и аргинина обладало мясо молодняка белорусской чёрно-пёстрой породы. По содержанию триптофана, изолейцина, метионина, валина, фенилаланина и гистидина преимущество имели животные породы йоркшир, однако они значительно лимитированы по содержанию лейцина, что свидетельствует о несбалансированности аминокислотного состава. Животные породы ландрас испытывали небольшую недостачу метионина, белорусская крупная белая – треонина. Белорусская мясная порода и дюрок имеют сбалансированный аминокислотный состав.
Afficher plus [+] Moins [-]anglais. A comparative content analysis of amino acids in samples of longissimus dorsi of purebred young pigs of different genotypes was conducted. It is established that the meat of young animals of Belarusian black-motley breed had the highest content of essential amino acids and Landrace – non-essential. The highest content of threonine, leucine and arginine has meat of young animals of Belarusian black-motley breed. On the content of tryptophan, isoleucine, metionine, valine, phenylalanine and histidine Yorkshire breed animals have an advantage, but they are considerably limited in content of leucine, that indicating the imbalance of amino acid composition. The Landrace breed animals experiencing a small shortage of methionine, Belarussian Large White - threonine. The Belarus meat breed and Duroc has balanced amino acid composition.
