Efficiency of the process of alcoholic fermentation during mash wart processing is determined with the quality of enzymatic hydrolisis of grain raw materials and physiological status of yeasts. Metabolic activity of the yeasts is estimated by culture media composition, containing necessary number of carbohydrates, nitrogen and mineral substances. Utilization of enzyme preparations of selective action promotes bioconversion of all the components of grain, increasing influence of amylolithic enzymes. The article presets the results of the research on optimization of the process of yeast generation at differentiated division and processing of rye biopolymers by applying proteolytic and cellulolytic enzyme preparations. The influence of the applied enzyme preparations on yeast cells concentration has been established. The dynamics of getting carbon dioxide in the process of yeast generation with the use of alcohol dry yeast Oenoferm C2 has been conducted.

В статье приведены результаты исследований по оптимизации процесса дрожжегенерации при дифференцированном разделении и переработке биополимеров ржи путем применения ферментных препаратов протеолитического и целлюлолитического спектра действия. Установлено влияние вносимых ферментных препаратов на концентрацию дрожжевых клеток, исследована динамика выделения диоксида углерода в процессе дрожжегенерации при использовании спиртовых сухих дрожжей Оеноферм С2.
