Biochemical composition of introduced varieties of black chokeberry in Belarus (Aronia melanocarpa)

The article presents the research of biochemical composition of introduced varieties of black chokeberry in the conditions of the Republic of Belarus. Genotypic differences in biochemical composition of fruits such as natural form of black chokeberry and varieties Venissa and Nadzeja of Institute of Horticulture have been established. Composition of dry matter and organic acids in fruits of introduced taxons has been analyzed. Average differences between natural form of dry matters and organic acids (in dry mass) in Aronia melanocarpa have been evaluated. Content of soluble sugars and pectins in dry mass of introduced varieties of black chokeberry has been measured. It has been shown that the selection process contributed to the impoverishment of flavonols, organic free and phenol carbonic acids, pectin and tannins in berries, and their enrichment of anthocyanins, catechins and soluble sugars (cultivar Venissa) and ascorbic acid (cultivar Nadzeja) with substantial improvement of organoleptic properties.

Приведены результаты сравнительного исследования биохимического состава плодов 3 таксонов аронии черноплодной - природной формы, широко распространенной на территории Беларуси, и двух сортов селекции Института плодоводства - Венисса и Надзея. Установлено, что селекционный процесс способствовал обеднению плодов флавонолами. свободными органическими и фенолкарбоновыми кислотами, пектиновыми и дубильными веществами, на фоне их обогащения собственно антоцианами и катехинами, а также растворимыми сахарами (у сорта Венисса) и аскорбиновой кислотой (у сорта Надзея) при существенном улучшении органолептических свойств. Показано, что оба сорта аронии превосходили природную форму по интегральному уровню питательной и витаминной ценности плодов при лидирующем положении сорта Венисса, который можно рассматривать как наиболее перспективный для районирования и селекции по содержанию в плодах полезных веществ. Вместе с тем оба тестируемых сорта аронии представляют интерес в качестве природных источников, в первую очередь, антоциановых пигментов с их выраженной Р-витаминной и антиоксидантной активностью, а также катехинов.
