anglais. Development of meat animal breeding appears one of the most important directions of the improvement of beef production. Quality and food value of the meat is directly depends on the animals’ breeds. Therefore, the main goal of the research appears determination of the efficiency of growing of young animals of black-and-white breed and hybrids of Hereford x black-and-white and Aberdeen Anguss x black-and-white breeds. The research has been carried out in 2012-2013 upon 3 groups of animals of 18-months age. Meat productivity have been measured by removable mass, preslaughter weight and slaughter yield of the bulls’ carcasses. Slaughter characteristics of experimental animals have been measured. Correlation between natural-anatomic parts in semi-carcasses of experimental bulls has been analyzed. Economic efficiency of the beef production from the bulls of different breeds has been evaluated. The conducted research shows that the carcasses of Hereford x black-and-white and Aberdeen Anguss x black-and-white bulls have a muscular lumber part, back part, a well-developed chest part, a better coxofemoral part than the carcasses of black and white bulls. В проведенных исследованиях установлено, что туши герефорд x черно-пестрых и абердин-ангусс x черно-пестрых быков имели более хорошо выполненную тазобедренную, мускулистую поясничную, спинную и прекрасно развитую грудную части, чем туши быков черно-пестрой породы. Так, при убое подопытных животных значительное преимущество по вышеобозначенным показателям наблюдалось у герефорд x черно-пестрых помесей. Они превосходили сверстников черно-пестрой породы по предубойной живой массе на 27,2 кг, или 5,0 %, а абердин-ангусс x черно-пестрых − на 19,3 кг, или 3,5 %. Так, герефорд- и абердин-ангусс x черно-пестрые помеси превышали своих чистопородных сверстников по массе парной туши на 11,1 (Р менее 0,01) − 6,5 % (Р менее 0,05), по выходу туши − на 2,96−2,54 п.п. (Р менее 0,01), по убойному выходу – на 3,2–2,8 п.п. (Р менее 0,001) соответственно.
