Features of vitamin and mineral composition of meat of bulls of different genotypes

Дятловского района Гродненской области изучен витаминный и минеральный состав мяса быков различных генотипов. Были отобраны три группы быков (по 10 голов в каждой): быки черно-пестрой породы (1 группа, контроль), герефорд х черно-пестрые (2 группа, опытная) и абердин-ангусс х черно-пестрые (3 группа, опытная). Животные от рождения до убоя содержались и выращивались по технологии, принятой в молочном скотоводстве. Содержание животных было беспривязным, кормление всех групп быков осуществлялось одинаково и соответствовало технологии, принятой в хозяйстве. Полученные данные свидетельствуют о том, что в образцах мяса абердин-ангусс х черно-пестрых помесей содержание таких элементов, как медь, цинк, кальций, магний и фосфор было больше соответственно на 5,6% (P более 0,05), 1,1% (P менее 0,01), 1,04% (P менее 0,001), 0,1% (P менее 0,01) и 1,2% (P менее 0,001) по сравнению с образцами мяса быков черно-пестрой породы. В мясе чистопородных черно-пестрых быков содержание витаминов В1, В2, РР, Е и В6 было выше по сравнению с герефорд х черно-пестрыми сверстниками на 15,3%, 8,0%, 2,3%,8,7% и 2,7% соответственно (Р более 0,05).

Dyatlovo district of the Grodno region the vitamin and mineral composition of meat of bulls of different genotype has been studied. Three groups of bulls (on 10 heads in everyone) have been selected: bulls of black-motley breed (1 group, the control), hereford х black-motley (2 group, experimental) and aberdeen-anguss х black-motley (3 group, experimental). Animals from birth to slaughter kept and grown on the technology used in dairy cattle breeding. The maintenance of animals was loose, feeding of all groups of bulls was carried out equally and corresponded to the technology used in the farm. Data suggests that in samples of meat of aberdeen-anguss x black-and-white crossbred bulls the content of elements such as copper, zinc, calcium, magnesium and phosphorus was higher by 5,6% (P more than 0,05), 1,1% (P less than 0,01), 1,04% (P less than0,001), 0,1% (P less than 0,01) and 1,2% (P less than 0,001) than in samples of meat of bulls of black pied breed respectively. Content of vitamins B1, B2, PP, E and B6 in the meat of thoroughbred black-motley bulls were higher compared to hereford x black-and-white peers on 15,3%, 8,0%, 2,3%, 8,7%, 2,7%, respectively (P more than 0,05).
