Quality indicators of backfat of purebred young pigs

anglais. The article presents results of research on chemical composition, physical properties and fatty acid composition of back fat of young pigs bred in Belarus. It was determined that samples of fat all the studied breeds had a good digestibility and by all indicators were considered fats of premium class. Analysis of fatty acid composition showed that the total amount of the essential fatty acids was higher in young Yorkshire, Belarusian Large White and Duroc breed animals – 45,25-46,98 %, indicating a more solid structure and calories level in fat. In samples of breeds Landrace, Belarus meat and Belarus black-motley opposite prevailed monounsaturated fatty acids (45,20-49,48 %), they have positive effect on lipid metabolism, but faster will undergo oxidation and damage. The highest level of polyunsaturated fatty acids was shown by young Yorkshire and Landrace breeds. They are significantly superior to all other breeds on 1,03-3,44 percentage points (P

В статье представлены результаты исследований по изучению химического состава, физических свойств и жирнокислотного состава хребтового шпика молодняка разводимых в Республике Беларусь пород свиней. Установлено, что образцы жира всех изучаемых пород обладали хорошей усвояемостью и по всем показателям относились к жирам высшего сорта.Анализ жирнокислотного состава показал, что суммарное количество НЖК было выше в шпике молодняка пород йоркшир, белорусская крупная белая и дюрок – 45,25-46,98 %, что свидетельствует о более твёрдой структуре и калорийности их сала. В образцах пород ландрас, белорусская мясная и белорусская чёрно-пёстрая напротив преобладали МНЖК (45,20-49,48 %), они положительно влияют на липидный обмен, однако быстрее подвергаются окислению и порче. Наибольшим содержанием полиненасыщенных жирных кислот отличался молодняк пород йоркшир и ландрас. Они достоверно превосходили все остальные породы на 1,03-3,44 п.п. (P
