Comparative efficiency of methods of steers stunning and its effect on stress markers and beef quality

In a course of the researches there was studied the comparative effectiveness of mechanical and electrical methods of steers stunning and the influence of this methods on the manifestation of the stress response and meat quality. One of the conditions for increasing the efficiency of cattle slaughter is to improve the technology of young cattle. A mandatory requirement is the use of modern methods of humane treatment of animals, based on minimizing stressors ranging from the preparation of animals before slaughter to bleeding. The research was realized in the conditions of the Republic of Belarus. As a result of realized research there was revealed that steers stunning by using an air gun compared with a stunning by electro stick, reduced the number of cases оf inefficient stun and minimize development of stress reaction, reduced the amount of confiscated goods and improved the quality of produced beef.

Одним из условий повышения эффективности скотоводства является совершенствование технологии убоя молодняка крупного рогатого скота. Обязательным современным требованием является применение гуманных методов обращения с животными, основанных на минимизации стрессоров, начиная от предубойной подготовки животных до обескровливания. Показано, что оглушение бычков с помощью пневмо-пистолета, по сравнению с оглушением электростеком, позволяет сократить количество случаев неэффективного оглушения, минимизировать развитие стресс-реакции, уменьшить количество конфискатов, повысить качество получаемой говядины.
