The mythical and biblical significance of salt, based on its physiological importance, and its crucial role in the evolution of humanity for millennia, is threatened to lose its meaning by the awareness that the current high level of salt consumption is a serious health risk. Evidencebased medicine suggests a relationship between excessive salt intake and hypertension and other non-communicable diseases (NCD). World Health Organization suggests that the reduction of salt intake is one of the most cost-effective measures for improvement of public health worldwide. Even a modest reduction in dietary salt could substantially reduce cardiovascular events and treatment costs. Under the present high levels of sat intake, dominantly through dietary sources such as processed and ready-to-eat foods, the old Latin proverb “cum grano salis” should be given its literal meaning - only with a grain of salt!
