Meat processing capacities are highly important for the preservation and development of animal husbandry production. In order to preserve rural communities and sustain equal development of rural regions, it is necessary to locate at least a part of meat processing in small-capacity factories. Such capacities result in the production of limited series of products while preserving their geographical indication. On the other hand, small-capacity factories can only be successful if economic indicators of business process are strictly followed and controlled. The first step in this economic analysis is determining the price cost of products. The results obtained suggest that only high-quality products have economic potential, if they are produced from domestic raw materials and to standard technological recipes. On the other hand, products of lesser quality and lower price require cheaper initial raw materials.
