Veterinary and sanitary evaluation of meat and liver of histomoniasis turkey | Ветеринарно-санитарная оценка мяса и печени индейки при гистомонозе

anglais. The aim of the study is to conduct a comparative veterinary and sanitary evaluation of the quality of meat products from healthy and Histomonas infected poultry. By microscopic examination of cecum scrapes it was found out that 6 of 10 turkeys had amastigote forms of Histomonas with low invasion intensity. In this poultry's bowel Heterakis gallinarum eggs with infection intensity of 1-4 specimens were found. It was established that samples of meat and liver from turkeys invaded by Histomonas meleagridis are characterized by signs of stale production: the color of the liver is yellow or reddish-brown, the meat is pale pink, its consistency is mild, the smell is sour or sour-rotting, hemorrhages are seen on the liver surface. When cooking meat products, a cloudy broth of grayish or yellowish color with a lot of flakes and sediment on the bottom, having an unpleasant odor, is formed. The results of organoleptic studies are proved by physical-chemical (reaction to peroxidase, Nessler's test and pH level) and microbiological indices. A high level of bacterial contamination of surface and deep layers of the liver from invaded turkeys and the excess of mesophilic aerobic and facultative anaerobic microorganisms (QMAFAnM) by 2x105 CFU / g in meat have been established. Organoleptic, physical-chemical and microbiological studies have shown that the liver and meat of turkeys invaded by Histomonas meleagridis are inferior and unsuitable for human consumption. Therefore, the evaluation of product quality in the case of turkey histomonosis should be carried out not only on the basis of post-mortem examination results, but also taking into account organoleptic, physical-chemical and microbiological parameters.

russe. Цель исследования - проведение сравнительной ветеринарно-санитарной оценки качества мясной продукции от здоровой птицы и зараженной гистомонадами. При микроскопическом исследовании соскобов со слизистой оболочки слепых отростков у 6 индеек из 10 обнаружили безжгутиковые формы гистомонад с невысокой интенсивностью инвазии. В содержимом кишечника этих птиц методом Фюллеборна обнаружены яйца Heterakis gallinarum, интенсивность инвазии – 1-4 экземпляра. Установлено, что пробы мяса и печени от индеек, инвазированных Histomonas meleagridis, характеризуются признаками несвежей продукции: цвет печени – желто- или красно-коричневый, мяса – бледно-розовый, консистенция мягкая, запах кисловатый или кисловато-гнилостный, на поверхности печени видны кровоизлияния. При варке мясных продуктов образуется мутный бульон сероватого или желтоватого цвета с большим количеством хлопьев и осадком на дне, неприятным запахом. Результаты органолептических исследований подтверждаются физико-химическими (реакция на пероксидазу, проба Несслера, уровень рН) и микробиологическими показателями. Установлен высокий уровень контаминации бактериями поверхностных и глубоких слоев печени от инвазированных индеек, превышение количества мезофильных аэробных и факультативно-анаэробных микроорганизмов (КМАФАнМ) на 2x105 КОЕ/г в мясе. Органолептические, физико-химические и микробиологические исследования показали, что печень и мясо от индеек, инвазированных Histomonas meleagridis, являются недоброкачественными и непригодны для употребления в пищу. Следовательно, оценка доброкачественности продукции при гистомонозе индеек должна осуществляться не только на основании результатов послеубойного осмотра, но и с учетом органолептических, физико-химических и микробиологических показателей.
