Quality dynamics of the first yield milk colostrum of dairy breeds cows depending on calving season | Динамика качества молозива первого удоя у коров молочных пород в зависимости от сезона отела

anglais. The paper looks at recent research dealing with the influence of the season on the quality of a colostrum of the studied breeds. It is established, that the largest content of fat and protein in the colostrum of the first yield of milk was during the autumn and winter period. The casein share in the colostrum is 28.3%, an albumin in the winter - 30.9%, a globulin - 40.8%. It was founded that the lowest protein content was in the colostrum of Holstein breed cows, and the highest was in Bestuzhev breed. The largest content of immunoglobulins after the third calving was in the colostrum of Bestuzhev breed cows during the winter period (99,10 g/l), which is higher in comparison with the Black Pied breed by 54.4%, Holstein breed - by 77.8%, Ayrshire - by 16.3%. Within the breeds the difference on the content of immunoglobulins between winter and summer seasons was, respectively, 4.2: 1.3: 4.8: 1.8%. It should be mentioned that the content of immunoglobulins in milk of the first milk yield considerably changes with the age of cows. The content of immunoglobulins in the colostrum of Black Pied breed cows and Ayrshire breeds reaches the maximum value after the fourth calving, Bestuzhev - after the fifth, Holstein – after the third calving. The difference between the first lactation and the lactation with the maximum value during winter calving was at Black Pied breed cows - 112.0%, Bestuzhev - 94.3%, Holstein - 82.3%, Ayrshire - 81.4%. It was noted that the lowest content of immunoglobulins, irrespective of the animals' age, was during the summer period. After the fifth calving during the winter period the Bestuzhev breed surpassed its herd mates in the immunoglobulins content of Black Pied breed by 114.3%, Holstein – by 207.8%, Ayrshire - by 31.4%, during the summer period, respectively by 121.8%; 222.6%; 31.7%.

russe. Изучено влияние сезона года на качество молозива изучаемых пород. Установлено, что наибольшее содержание жира и белка в молозиве первого удоя было в осенне-зимний период. Доля казеина в молозиве зимой составляет 28,3%, альбумина - 30,9%, глобулина - 40,8%. Самое низкое содержание белков отмечено в молозиве коров голштинской породы, а самое высокое у коров бестужевской породы. Наибольшее содержание иммуноглобулинов после 3-го отела отмечено в молозиве животных бестужевской породы в зимний период (99,10 г/л), которые превосходили по этому показателю черно-пеструю породу на 54,4%, голштинскую - на 77,8%, айрширскую - на 16,3%. Внутри пород разница по содержанию иммуноглобулинов между зимним и летним сезонами составила соответственно 4,2; 1,3; 4,8; 1,8%. Содержание иммуноглобулинов в молоке первого удоя значительно изменяется с возрастом коров. Максимального значения содержание иммуноглобулинов в молозиве коров черно-пестрой и айрширской пород достигает после 4-го отела, бестужевской – после 5-го, голштинской – после 3-го отела. Разница между 1-й лактацией и лактацией с максимальным значением при зимних отелах составила у коров черно-пестрой породы 112,0%, бестужевской - 94,3%, голштинской - 82,3, айрширской - 81,4%. В летний период отмечено самое низкое содержание иммуноглобулинов независимо от возраста животных. После 5-го отела в зимний период бестужевская порода превосходила по содержанию иммуноглобулинов сверстниц черно-пестрой породы на 114,3%, голштинской - на 207,8%, айрширской - на 31,4%, в летний период соответственно на 121,8; 222,6; 31,7%.
