Among plant medications of high therapeutic value, grapes need to be specially mentioned. Grapes and products of its processing are rich in flavonoids having high antioxidant and bactericide properties. Seeds of grapes represent a natural radiation protective means. However, such use of them in the country is insignificant. The purpose of the study was to make a product rich in biologically active materials using non-traditional raw material and to determine its quality. Seeds of Isabella grapes served as an object of research. The seeds remaining after squeezing the juice from the grapes used to be dried, from which an alcohol infusion was made, as well as a soft drink from the latter. Percentage of the so made drink components is determined experimentally. The drink with best gustatory properties was selected as a result of tasting. The selected drink’s quality (organoleptic and physicochemical properties) meets best standards. The product was also assessed for its content of biologically active materials.. Ref. 21.
