After fruit processing, most often to juice, jam or brandy, there is a large quantity of by-products left behind that can have different purposes. This paper examines the possibility of using seeds and kernels from by-products for obtaining cold pressed oils. As a starting material, apple seeds and plum kernels were used, and basic parameters of quality and nutritive characteristics of cold pressed oils were tested. The results obtained, such as the high percentage of essential fatty acids, total tocopherols and good oxidative stability, indicate that the by-producta (seeds and kernels) are an interesting source of nutritionally valuable cold pressed oils.
