Wild chervil (Anthriscus sylvestis, Apiaceae) is a rich source of diverse lignans with potent anticancer, anti-inflammatory, antimicrobial and phytoestrogenic activity, mainly belonging to aryltetralins (ATs), saturated and unsaturated dibenzobutyrolactones (DBBLs). While it has a limited use in traditional medicine, it could represent a valuable functional food for prevention and treatment of various diseases, as well as raw material for production of semisynthetic chemotherapeutic agents. The objective of this research was to investigate the effects of harvesting time on relative content and profile of dominant lignans, as well as distribution of these compounds throughout the plant tissues. Samples of A. sylvestris roots, stems, leaves, and flowers and fruits were collected at Fruška Gora mountain in April-June 2017, extracted with methanol and analyzed using LC-DAD-MS. The content of lignans was found to be by far the highest in root samples, regardless of harvest time. Despite the high variability, certain trends were observed. For the majority of compounds, the content in aboveground parts was consistently low and decreasing over time. The root content of dominant ATs and unsaturated DBBLs (but not of saturated DBBLs, that are less active) increased over time and reached maximum by the end of May, while the content of 7-oxygenated ATs (podophylotoxone, podophyllotoxin and conjugates), after initial rise, exhibited drop in June. Thus, for the highest yield of the most potent compounds and compounds useful as industrial precursors, the plants should be harvested by the end of flowering phase, before they are fully ripened
