Content of toxic elements in potato varieties Kennebec and Karlena

Food safety is the most important factor in consumer preference in terms of healthy life. In recent years, worldwide attention has been focused on the content of toxic elements in vegetables. This work aimed to analyze the content of As, Cd, Cr, Hg, Ni, Pb and V in potato tubers of Kennebec and Karlena varieties grown in the most important potato production regions in Serbia. Significant differences between the varieties were observed in concentrations of elements in tubers which ranged from 0.050 mg kg-1 (V) to 0.740 mg kg-1 (Pb) in Kennebec, and from 0.058 mg kg-1 (As) to 1.112 mg kg-1 (Ni) in Karlena.
