The use of anthocyanin pigment berries of the Far Eastern region in the production of marmalade | Использование антоцианового пигмента ягод Дальневосточного региона в производстве мармелада

anglais. The effect of ultrasound and extraction conditions on the intensity of the extraction of anthocyanin pigment (AP) from the berries of magnolia-vine and viburnum was studied. When extracting the berries of magnolia-vine and viburnum with an aqueous solution at a temperature of 25 deg. C, the content of AP was 3.035 and 1.893 mg/ml, respectively. Elevating the temperature of an extracting solution up to 65 deg. C increased the degree of AP extraction and adjusted the AP yield of magnolia-vine and viburnum berries to 3.168 and 2.126 mg/ml, respectively. Ultrasonic exposure (35 kHz, capacity 80 W) at a temperature of 25 deg. C for 30 min increased the AP yield of magnolia-vine and viburnum berries by 4 and 10%, respectively, as compared to the no ultrasound variant. Formulations of jelly marmalade with the addition of AP of magnolia-vine and viburnum berries were developed. Its organoleptic characteristics we defined. Marmalade samples with the addition of 50% AP of magnolia-vine and viburnum had the best ones. The marmalade with the addition of the studied AP acquired a good bright red color and had, respectively, a pronounced sweet-sour and sweet-and-sour taste with a slight bitterness. All physico-chemical and sanitary-hygienic indicators of the quality of jelly marmalade with 50% content of AP of magnolia-vine and viburnum correspond to the standard values. It is shown that the replacement of the dye and gelling complex in the formulation of marmalade with the AP-anionic polysaccharide complex can improve the structural and mechanical properties of the jelly.

russe. Изучено влияние ультразвука и условий экстрагирования на интенсивность извлечения антоцианового пигмента (АП) из ягод лимонника и калины. При экстрагировании ягод лимонника и калины водным раствором при температуре 25 град. С содержание АП составляло 3,035 и 1,893 мг / мл соответственно. Повышение температуры экстрагирующего раствора до 65 град. С увеличило степень извлечения АП и довело выход АП из ягод лимонника и калины до 3,168 и 2,126 мг / мл соответственно. Воздействие ультразвуком (35 кГц, мощность 80 Вт) при температуре 25 град. С в течение 30 мин увеличило выход АП из ягод лимонника и калины на 4 и 10 % соответственно по сравнению с вариантом без ультразвука. Разработаны рецептуры желейного мармелада с добавлением АП лимонника и калины. Определены его органолептические показатели, лучшими из которых обладали образцы мармелада с добавлением 50 %-ного АП лимонника и калины. Мармелад с добавлением изучаемого АП приобретал приятный ярко-красный цвет и имел выраженный кисло-сладкий и кисло-сладкий с легкой горечью вкус. Все физико-химические и санитарно-гигиенические показатели качества желейного мармелада с 50 %-ным содержанием АП лимонника и калины соответствуют нормативным значениям. Показано, что замена в рецептуре мармелада красителя и студнеобразователя комплексом АП-анионный полисахарид позволяет улучшить структурно-механические свойства студня.
