Повышение качества мяса цыплят-бройлеров / Improving quality of broilers meat

The aim of the study was to study the effect of the probiotic “Bioplus 2B” on the formation of muscle fiber and offal of broiler chickens according to the results of anatomical cutting and histological studies. The studies have shown that the use of the feed additive with probiotic cultures “Bioplus 2B” has a positive effect on broiler performance and helps to reduce feed costs per 1 kg of weight gain. This feed additive can be recommended for use of meat crosses in the technology of industrial raising of poultry. The inclusion of the probiotic “Bioplus 2B” in doses of 0.4 kg per head per day in the technology of feeding broiler chickens from the 5th to the 40th day of life is capable of providing “healthy”, environmentally friendly poultry products with low fat content. It is recommended to combine antibiotics used to prevent intestinal infections from the 1st to the 5th day of life of broiler chickens and the probiotic “Bioplus 2B” from the 5th to 40th day of life of broiler chickens to reduce the negative effect of the antibiotic on muscle tissue, liver and muscle stomach of broiler chickens. The meat and offal of broiler chickens treated with the probiotic “Bioplus 2B” can serve as raw materials for the production of dietary meat products for medical, therapeutic and preventive nutrition and specialized nutrition. /Цель исследования – изучить влияние пробиотика «Биоплюс 2Б» на формирование мышечного волокна и субпродуктов цыплят-бройлеров по результатам анатомической разделки и гистологическим исследованиям. Проведённые исследования показали, что использование кормовой добавки с пробиотическими культурами «Биоплюс 2Б» оказывает положительное влияние на продуктивность бройлеров и способствует сокращению затрат кормов на 1 кг привеса. Данную кормовую добавку можно рекомендовать для применения в технологии промышленного выращивания птицы мясных кроссов. Включение пробиотика «Биоплюс 2Б» в дозах 0,4 кг на голову на день в технологию кормления цыплят-бройлеров с 5-й по 40-й день жизни способно обеспечивать получение «здоровых», экологически безопасных птицеводческих продуктов с пониженной жирностью. Рекомендуется комбинировать антибиотики, применяемые для профилактики кишечных инфекций с 1-й по 5-й день жизни цыплят-бройлеров, и пробиотик «Биоплюс 2Б» с 5-й по 40-й день жизни цыплят-бройлеров для снижения негативного влияние антибиотика на мышечную ткань, печень и мышечный желудок цыплят-бройлеров. Мясо и субпродукты цыплят-бройлеров, получавших пробиотик «Биоплюс 2Б», могут служить сырьём для производства диетических мясных продуктов лечебного, лечебно-профилактического питания и специализированного питания.
