Computer-aided determination of glycerol in food products with GlycerolSoft, a tool for assessing the quality of food

The glycerol content of food products appears to be a very useful indicator of food quality and is increasingly used for this purpose. Several methods have developed to measure the glycerol content, including the Boehringer enzymatic kit method, which is one of the better methods. However, data acquisition and analysis are very time consuming. Furthermore, data conversion and transfer from the analytical instrument to the computer for processing the data and the management of the results are cumbersome. PC Windows-based software GlycerolSoft has been developed to automate the transfer, conversion, mathematical analysis and management of series of the UV data. GlycerolSoft can handle 15 samples simultaneously with their associated blank. An analytical report can be produced with the full set of results, including blank, and sample curves with their mathematical treatment, i.e. automatic detection of the break point or calculation of the asymptotic straight line of the analytical curve. The software provides a file containing the glycerol content allowed in each food matrix, and that can be used to establish the conformity of the samples to current regulations.
