Intensification of tea fermentation process using ozone.

There is described the process of fermentation of tea leaf and there is shown, that ozone can be used instead of oxygen entering the ambient air to intensify fermentation. This ensures, in conditions of low-productivity farm tea processing factories with low economic costs and short technological processes, the achievement of high quality of finished products. There is presented the principal scheme of a new device for fermentation of tea, in which, using ozone, significant acceleration of the process and increase in the quality of the product are achieved, which is of great importance for the tea factory in the country.
