Effect of exogenous ethylene in the ripening of ciku (Achras sapota L.)

The effects Qf exogenous-ethylene-at different concentratiotl-(O,. 1, 5 and 20 ppm) for ripening purposes were studied on ciku Var. Jantung. Optimum ripening occurred 5.:.6 days after the induction period of 24 hours. The preclimacteric stage in the control fruits were tonger as compared to the-t ppm treated fruits, indicating that exogenous ethylene tend to hastem the climacteric peak. No upsurged in climacteric and ethylene peaks occurred-in fruits after treatment with 5 and 20 ppm ethylene which possibly could have occurred during the ripening induction. At edible stage, fruits treated with 5 ppm showed a moderate changed in firmness, higher sugar content and TSS value. The 5 ppm treated fruit& also appeared to be more accepted by the panelist as judged by the various sensory attributes.
