Влияние вида исходного сырья на физико-химические и реологические свойства набухающего крахмала | Influence of the raw material type on the physical-chemical and rheological properties of swelling starch

anglais. A comparative physicochemical and rheological properties assessment of the native and modified starches was carried out. Samples of swelling starches (without pretreatment) and swelling starches treated with cross-linking agents (sodium trimethaphosphate and adipic acid), as well as swelling carboxymethyl starches were obtained and analyzed. It was revealed that the viscosity peak (1023 mPa*s) among the original starches has a 2% paste of potato amylopectin starch. The viscosity of the original amylopectin starch paste has decreased to 600 units when it was cooled to 30 deg. C Br (potato amylopectin starch) and up to 340 units Br (corn amylopectin starch). While the viscosity of the pastes from the original starches when cooled to 30 deg. C has increased up to 950 units Br (potato starch) and up to 880 units Br (corn starch). The modifications obtained from the original starches using a roller dry were also differed in terms of the viscosity of their pastes. 3% paste of the swelling potato of amylopectin starch has a viscosity of 1117 mPa*s, carboxymethyl starch from the swelling potato amylopectin starch has a viscosity of 768 768 mPa*s. The dynamic viscosity of swelling corn amylopectin starch was 64.8 mPa*s, and its carboxymethyl starch modifications was 174 mPa*s. The suspension of starches treatment by the inhibition reactants of sodium trimethephosphate and adipic acid (before a roller dryer) led to the viscosity decreasing of their pastes. A sample of swelling potato amylopectin starch with 2% of sodium trimethaphosphate and 1% of adipic acid has the lowest dynamic viscosity of 22 mPa*s. The highest viscosity (200 mPa*s) has a paste of inhibited swelling potato amylopectin starch with 0.75% sodium trimethaphosphate. The studies have shown the promising effect of using potato amylopectin starch and its modifications for stabilization, thickening and binding of various structures in food and technical industries.

russe. Проведена сравнительная оценка физико-химических и реологических свойств исходных крахмалов и полученных из них модификаций. Получены и проанализированы образцы набухающих крахмалов без предварительной обработки и набухающие крахмалы, предварительно обработанные сшивающими реагентами (триметафосфатом натрия (ТМФ) и адипиновой кислотой), а также набухающие карбоксиметилкрахмалы (КМК). Выявлено, что наибольшей вязкостью (1023 мПа*с) среди исходных крахмалов обладает 2%-ный клейстер картофельного амилопектинового крахмала (АПК). Вязкости клейстеров исходных АПК при охлаждении до 30 град. С снижаются до 600 ед. Бр у картофельного АПК и до 340 ед. Бр у кукурузного АПК, тогда как вязкости клейстеров обычных исходных крахмалов при охлаждении до 30 град. С увеличиваются до 950 ед. Бр у картофельного крахмала и 880 ед. Бр у кукурузного крахмала. Модификации, полученные из исходных крахмалов на вальцовой сушилке, также различаются по показателям вязкости их клейстеров. 3%-ный клейстер картофельного набухающего АПК имеет вязкость 1117 мПа*с, а клейстер КМК из набухающего картофельного АПК – 768 мПа*с. Динамическая вязкость набухающего кукурузного АПК – 64,8 мПа*с, а его КМК-модификации – 174 мПа*с. Обработка суспензии крахмалов сшивающими реагентами ТМФ и адипиновой кислотой перед подачей на вальцовую сушилку привела к снижению вязкости их клейстеров. Образец набухающего картофельного АПК с 2% ТМФ и 1% адипиновой кислотой имеет наименьшую динамическую вязкость – 22 мПа*с, наибольшую вязкость имеет клейстер сшитого набухающего картофельного АПК с 0,75% ТМФ – 200 мПа*с. Исследования показали перспективность применения картофельного АПК и его модификаций для стабилизации, загущения и связывания разных структур в пищевых и технических производствах.
