Slaughter results of purebred and crossbred beef cattle in Latvia

The aim of the study was to carry out research on the slaughtering of purebred and crossbred beef cattle in Latvia. During the research period (2017–2021), 60411 cattle were slaughtered, 73.5% of obtained carcasses were evaluated according EUROP classification system. The main part of the slaughtered cattle was crossbreds of different breeds – 84.8%. From the purebred group, Charolais cattle were the most slaughtered, together 4819 animals. The evaluation of carcasses was dominated by R musculature (50%) and 2nd fat class (42.8%). In the structure of sexes, the majority were suckler cows with an average age in group of 86.2 months.
