The aim of the research is to study the qualitative composition of milk of cows of Ukrainian red-and-white dairy breed in terms of households and in the context of genealogical descent. Studies have been conducted on the content of fat, protein, casein, lactose and somatic cell count in cow milk. Ukrainian dairy animals breed red-and-white different quality indicators satisfactory milk production. Accessible correlative relationship between certain quality indicators milk production indicates the possibility of successful selection of measures for their improvement.
