Flax seed has been used for centuries as a source for the production of edible oil. In recent years, the results of numerous studies that talk about the potential benefits to health, including the prevention of chronic diseases, are drawingmore and more attention to the use of oil and flax seeds for edible purposes. A large number of health problems areclosely linked to irregularities in the composition of fatty acids in the diet. Essential fatty acids can not be synthesized inthe body, so they are entered exclusively through food. Flax seed and oil contain three most important components thatbenefit human health: very high content of alpha-linolenic acid (omega 3 fatty acid), high content of soluble and insoluble dietary fibers, and the highest content of lignan phytoestrogens from all plant products used in human nutrition. Forthe above reasons, in this paper, on the basis of the latest literature data, the possibilities of production of edible oilsand other products from flax seed, as well as the advantages of their application, are analyzed and presented, primarilyin the diet of people, ie in animal nutrition and use for industrial and technical purposes.
