Gelatin is a multi functional hydrocolloid; Therefore, it has a wide use in food, pharmaceutical, cosmetics, medicine and photography products. It is most commonly used in sugar beverages and drug capsules in the world. Validation of gelatin and evaluation of origin; It not only helps prevent the commercial frauds in the food, cosmetics and pharmaceutical industries, but also help stop revent security risks from diseases that can be seen in fattening animals that may be harmful to human health. For this reason, the correct identification of gelatin strains is of primary importance for the sesectors.
