Dressing percentage and proportion of the main body parts in black buffalo (Ictiobus niger) and big-mouthed buffalo (Ictiobus cyprinellus) in comparison with some commercial fish species

Proportions of the main body parts (scales, fins, total entrails, dressed carcass) and dressing percentage according to the standard CSN 46 6802 were determined in black buffalo (age 1+) and big-mouthed buffalo (age 1+, 2 and 2+). The dressed carcass made 66.8 per cent in black buffalo, 63.5 - 66.4 per cent in big-mouthed buffalo. The proportions of entrails in black buffalo and big-mouthed ranged from 6.8 to 8.1 per cent. The proportion of head in black buffalo made 15.6 per cent and in big-mouthed buffalo 17.5 - 19.9 per cent.
