[Rice - the important staple food in Sierra Leone]

Although rice is generally the staple food in developing countries in Asia, eating patterns are similar in some West African countris including Sierra Leone. Almost every cropping method known anywhere can be found in Sierra Leone. Another interesting feature of rice production there is the parboiling of rice (soaking the paddy, then steaming it and redrying it before milling), practised to improve the nutritional value of rice and raise its milling return. Up to the mid fifties Sierra Leone enjoyed self-sufficiency in rice. Since then, it has become a net importer of this commodity, at an ever increasing rate.
