Evaluating the market for boneless lean lamb products in selected supermarkets [Melbourne, Victoria]

A range of boneless cuts prepared from large, lean lamb carcasses and traditional bone-in cuts were presented to customers in 2 supermarkets in Melbourne. The customers' responses confirmed that boneless cuts prepared from large lean carcasses were an attractive, versatile and convenient adjunct to their red meat purchases. However there were several barriers to the immediate successful introduction of the boneless cuts. Issues which require further work are: difficulties in differentiating the products on shelves; butchers' perceptions of large lambs as being over-fat; and increased butcher preparation time for the boneless cuts.
