Meat performance of fattened young bulls of the Montbeliarde breed

Experimental fattening involved 29 purebred bulls of Montbeliarde (Mo) and 24 bulls of improved Czech Pied breed (C). The average age of slaughter bulls of Montbeliarde breed was 526 days and in the bulls of control group 524 days. There were no statistically significant differences in live weight growth between the breeds. Significantly lower weight of bulls was recorded at the beginning of fattening and it was related to the lower weight at slaughter Mo. Different average weights of bulls at slaughter were reflected in realized price. Dressing percentage had almost the same values in both groups. Statistically significant differences were observed in total fat content and in the fat percentage out of the total slaughter weight. The effect of sires within the breeds was statistically significant in these indicators. Average weight of cold right sides of beef showed a difference of 10.5 kg in favour of the bulls of C. There were no statistically significant differences in the butcher's value of the indicators of the hind and fore quarter.
