[Effect of mineral content on protein production and growth speed of Aspergillus niger]

In the process of improving the nutritional quality of cassava and its byproducts by means of fermentation, utilizing Aspergillus niger as inoculum, an investigation was carried out on the effect of graded level of mineral supplementation growth performance of A. niger and on protein production. The development and spore production of A. niger was significantly affected by the level of mineral supplementation and the level of crude fiber in the substrate. Increasing the level of fiber, would speed up the production of spore, while reducing protein production. Increasing the level of mineral supplementation would increase protein production, while the spore production was delayed. This phenomena is probably closely related to the water activity of the substrate, which is in turn affected by the crude fiber and mineral content of the substrate

Dalam proses peningkatan nilai gizi dari singkong dan limbahnya dengan cara fermentasi substrat padat menggunakan Aspergillus niger sebagai inokulum, pengaruh berbagai kadar mineral terhadap laju pertumbuhan kapang serta produksi proteinnya dipelajari. Makin tinggi kadar serat kasar dari media, laju perkembangan/produksi spora semakin cepat, namun produksi protein semakin rendah. Selain itu semakin tinggi kadar mineral yang ditambahkan, laju perkembangan spora semakin lambat, namun produksi protein semakin tinggi. Hal ini kemungkinan erat hubungannya dengan water activity dari substrat, yang sebaiknya dipengaruhi oleh kandungan serat kasar mineral
