The consumer acceptance of fresh and dried onions is influenced mainly by its flavour strength. Consequently, the interactive effects of eight treatments, which were combinations of four levels of elemental sulfur fertilizer and two drying methods i.e. solar energy and electrical vacuum drying on several characteristics associated with the nutritional potential, pungency, drying and rehydration efficiency of onion, were evaluated. The following conclusions and recommendations are beeing made: Sulfur fertilization is a specific factor which influences not only onion odour strenght and its potential composition, but also its suitability for the drying industry by increasing its dry matter content. The horizontal solar drier proved to be better than the electrical vacuum one for the drying of onions, however further studies on this field should be undertaken.
