Survival of Escherichia coli O157, Salmonella enteritidis and Staphylococcus aureus in artifically contaminated egg liqueur with a content of ethanol of 14 vol.-% and 20 vol.-% and incubation at room temperature and at 4 deg C

allemand. Escherichia coli O157:H- E32511, Salmonella Enteritidis und Staphylococcus aureus NC 10652 wurden handelsueblichem Eierlikoer mit einem Alkoholgehalt von 14 Vol.-% und 20 Vol.-% zugesetzt. Die Inkubation erfolgte bei Raumtemperatur und bei + 4 Grad C, den verbrauchertypischen Lagerungstemperaturen. Es konnte eine deutliche Korrelation hergestellt werden zwischen der Ueberlebensfaehigkeit der Mikroorganismen und dem Alkoholgehalt des Eierlikoers und auch der Inkubationstemperatur.
