Nutritional value of leaf lettuce cultivars

Selected substances in a set of seven lettuce cultivars grown in different periods of the year were analysed. The influence of cultivar and growing period on the content of chemical substances (ascorbic acid, nitrates, potassium, sodium, calcium and magnesium) was determined. The results showed that the biggest differences were in the content of nitrates, depending on the growing period. However, there were no differences in the content of sodium. The influence of the cultivar was biggest in case of potassium content and it was not significant in the case of ascorbic acid.
