Analysis of freeze-drying of selected food stuff

A mathematical model of the process was elaborated and on its basis computer program enabling numerical calculations of the run of basic process parameters was made. The program permits calculations of the rate of freeze drying, changes in moisture content, rate of movement of ice front as well as temperature distribution inside dried material. Simulation calculations of the quantities were carried out for freeze drying of beef meat, soluble coffee solutions and solutions of powdered milk. The calculations were verified in an experimental plant according to the assumptions of the model. The experiments carried out in the same ranges of variable changes as the calculations confirmed validity of the proposed model
