Phenolics and quality of solar cabinet dried persimmon during storage [Diospyros kaki L. - Pakistan]

anglais. A solar drying process for persimmon (Diospyros kaki) was developed. The ripened but hard fruits were sliced (2.5-3.0 mm) and sulphited (0.2% SO2, 3 min) before drying in a solar cabinet dryer. It took about 10 hours for the samples to reach a moisture content of 15-16%. The moisture content of the dried fruit ranged from 14.3 to 16.8% after storing for 6 months at room temperature (18 deg - 30 deg C). The ascorbic acid content of the dried fruit ranged from 116.0 - 126.0 mg/100 g. A significant (P0.05) reduction in this vitamin was recorded after 6 months of storage, with values ranging from 102 to 109 mg/100 g. Phenolic compounds such as sinapine, catechin, anthocyanidin, leucoanthocyanidin and total phenols, which impart astringency, showed a decreasing trend during storage. Although all the dried samples were completely non-astringent, on sensory evaluation, the sulphited samples were rated higher (7.8) than control samples (6.1) for overall acceptability scores

I frutti maturi ma sodi sono stati affettati (2,5-3,0 mm) e solfitati (0,2% SO2, 3 min) prima di essere disidratati in un essiccatore a cella solare. I campioni sono stati mantenuti nell'essiccatore per 10 ore al fine di raggiungere un contenuto in umidita' del 15-16%. L'umidita' dei campioni essiccati era compresa tra 14,3 e 16,8% dopo una conservazione di 6 mesi a temperatura ambiente (18 gradi - 30 gradi C). Il contenuto in acido ascorbico dei frutti essiccati era compreso tra 116,0 e 126,0 mg/100 g. Una riduzione significativa (P0,05) di questa vitamina si osservava dopo 6 mesi di conservazione, con valori compresi tra 102 e 109 mg/100 g. Composti fenolici quali la sinapina, la catechina, l'antocianidina, la leucoantocianidina e i polifenoli totali, responsabili dell'astringenza, mostravano un decremento nel corso della conservazione. Anche se tutti i campioni essiccati risultavano non astringenti, ad una analisi sensoriale i campioni solfitati presentavano una valutazione migliore (7,8) dei controlli (6,1) per punteggio globale di accettabilita'
