Modelling of leek drying process with the use of artificial neural networks

Paper described the model including artificial neural networks (ANN) to describing changes in moisture content during convection drying of the leek at given drying agent temperature range, and theoretical models of the first and second drying periods. Logical and empirical verification confirmed the correctness of used models; total error for ANN based model was 13%, for theoretical model 22%. The ANN based model is to be applied mostly to practical computations; it could not replace the theoretical models which enable the analysis and explanation of phenomena occurring at drying process
