Fatty acid profile and cholesterol content of meat and organs of kids fattened to 16 kg

There was high share of unsaturated fatty acids in kids of Improved Polish White (as control) and hybrids with Boer and Nubian breed were respectively: 50.27; 48.23 and 49.01 percent in the liver, 49.87; 48.60 and 51.55 percent in the heart and 52.55; 53.42 and 52.40 percent in the m. longissimus dorsi. Index of P : S for analysed genotype groups averaged: 0.67; 0.56; 0.66 for the liver, 0.59; 0.54; 0.50 for the heart and 0.39; 0.42; 0.26 for the m. longissimus dorsi, respectively. The value of P : S index stated for the kids was higher then reported for lambs. Izo-C 16:0 form was distinguished within palmitin acid, which level differed significantly between analysed groups
