Content of total dietary fibre in edible parts of vegetables

The percentage content of fibre in 27 species and cultivars of vegetables coming from fields and an unheated plastic tunnel was determined. The total fibre content was determined using the enzymatic method Aspa. The effect of cultivars on the fibre content was shown. Varieties of radish differed by 2.1 g of fibre in 100 g of fresh matter, on average. Botanical varieties of bean differed by 0.4 g on average, and botanical varieties of cabbage - by 0.1 g/100 g. More fibre was found in cucumbers grown in the field than in those grown in an unheated plastic tunnel. On the other hand, lettuce grown in the field contained by 13 percent less dietary fibre than lettuce grown in an unheated plastic tunnel
