Measuring methods on slaughter line and meatiness in pigs in EU

The paper presents a review of measuring methods on the slaughter line which are the basis for the estimation of lean meat content in pig carcasses. Optical and ultrasound methods, as well as electrical conductivity method and video image analysis are described. The EU countries use various methods and devices. Large slaughter plants often use AutoFom which enables full automation of measuring with high accuracy. The EU members differ in selection of measurement points, carcass weights, as well as in average meat percentage. A joint research project is in progress in EU members and associate countries (including Slovenia), in order to improve methodology for measuring, testing, and monitoring the pig carcass quality.
