The improvement of quality represents one of the most important objectives of the durum wheat cultivation, to provide a good production to meet food manufacturing requirements. This study has examined experimental agronomic data of the National network of durum wheat concerning Grosseto province, for 16 years (1982-1998). The research was carried out aiming at analysing, for a sufficiently long time and in a determinate environment, the quanti-qualitative characteristics of durum wheat production and the principal factors that affect it. Wheat grain production has showed many variations during the experimental period. This confirms that climatic trend exhibited greater effects on the variability of the wheat grain production and the cultivar patrimony available is not able to adjust completely to annual climatic variations. The regression analysis has showed a continuous light decrease of the grain production during the period from 1982 to 1998. The analysis of the main qualitative parameters of the production (protein, ash and gluten concentration of the grain, gluten quality and yellow index) has not showed appreciable variations. The continuous introduction of new varieties has not improved the quality of the production, while has reduced lightly quantitative yield. Probably the Community politics of support to the durum wheat cultivation and the adoption of some cultivation techniques characterized by the reduction of cultivation inputs have contributed to the decrease of the quanti-qualitative production of durum wheat
