Slaughter and meat qualities of young pigs on fattening, depending on the usefulness of the diet with a probiotic supplement | Убойные и мясные качества молодняка свиней на откорме в зависимости от полноценности рациона с пробиотической добавкой

There are presented the results of studying the effect of probiotic additives in the diets of young fattening pigs on meat productivity and the level of mineral elements in organs and tissues. A scientific and economic experiment was carried out on 3 groups of young Large White pigs with an initial live weight of 54.2- 55.3 kg. The probiotic supplement "Sitexflor-5" was added to the main diet of 2 experimental groups. It comprised symbiotic cultures of bifidum bacteria and thermophilic streptococci in the amount of 15 ml and 20 ml per head per day, respectively. In young pigs in the experimental groups, the average daily increase in second group 2 was 582 g (P less than 0.05), and in group 3 it was 529 g (P less than 0.05), which was by 25.9 and 14.5% more, respectively, in comparison with the animals of the control group. The indicators of meat productivity also testified to the positive effect of the probiotic additives, so in the animals of group 2, an increase in slaughter yield by 3.2%, meat yield by 1.6% (P less than 0.05), protein content in muscle tissue (the longest back muscle) by 1.02%, the area of the "loin eye" by 18.1% was found in comparison with similar indicators in the control group. In young pigs of group 2, the copper content in the liver was higher than 30.1% (P less than 0.05) with a simultaneous decrease in zinc by 16.7%, and the concentration of copper and zinc in muscle tissue increased by 29.7% (P less than 0.05) and 4.0%, respectively, relative to the control. A decrease in the content of toxic elements of lead and cadmium in this group was found in the liver by 31.8% and 43.3%, in muscle tissue by 67.1% and 53.8%, respectively, in relation to the control group. Thus, it was proved that feeding young pigs during the fattening period of the probiotic supplement "Sitexflor-5" contributed to an increase in average daily gains, meat productivity and quality of meat products due to the intensification of metabolism.

russe. Представлены результаты изучения влияния пробиотических добавок в рационах молодняка свиней на откорме на мясную продуктивность и уровень минеральных элементов в органах и тканях. Научно-хозяйственный опыт проведен на 3 группах молодняка свиней крупной белой породы с начальной живой массой 54,2-55,3 кг. К основному рациону 2 опытным группам добавляли пробиотическую добавку "Ситексфлор-5", в состав которой входили симбиотические культуры бифидум-бактерий и термофильных стрептококков в количестве 15 мл и 20 мл на голову в сутки соответственно. У молодняка свиней в опытных группах среднесуточный прирост во 2-й группе составил 582 г (Р меньше 0,05), а в 3-й - 529 г (Р меньше 0,05), что соответственно на 25,9 и 14,5% больше в сравнении с животными контрольной группы. Показатели мясной продуктивности также свидетельствовали о положительном влиянии пробиотической добавки, так у животных 2-й группы, установлено повышение убойного выхода на 3,2%, выхода мяса на 1,6% (Р меньше 0,05), содержания белка в мышечной ткани (длиннейшая мышца спины) на 1,02%, площади "мышечного глазка" на 18,1% в сравнении с аналогичными показателями в контрольной группе. У молодняка свиней 2-й группы содержание меди в печени было выше 30,1% (Р меньше 0,05) при одновременном снижении цинка на 16,7%, в мышечной ткани увеличилась концентрация и меди и цинка соответственно на 29,7% (Р меньше 0,05) и 4,0% относительно контроля. Установлено снижение содержания токсичных элементов свинца и кадмия в этой группе в печени на 31,8% и на 43,3%, в мышечной ткани на 67,1%, и на 53,8% соответственно по отношению к контрольной группе. Таким образом, было доказано, что скармливание молодняку свиней в период откорма пробиотической добавки "Ситексфлор-5" способствовало повышению среднесуточных приростов, мясной продуктивности и качества мясопродуктов за счет интенсификации метаболизма.
