Agricultural waste generated after crop production is still largely underutilized. It is often burned in fields, especially in developing countries that do not have strong regulatory instruments to control such practices, including Serbia. As a common practice, open burning of agricultural residues leads to air pollution, which poses a risk to human health and the environment. In addition, they lead to a complete loss of organic matter and nitrogen, threaten wildlife and pose a great danger due to the possibility of uncontrolled spread of fire. The use of wheat, corn and sunflower crop residues has not yet been sufficiently investigated, it does not have a high-value application, so the aim of this work is to examine the composition of hexane extracts of wheat, maize and sunflower crop residues with special emphasis on the examination of fatty acid composition. It was found that there is no significant difference among the tested samples in the content of linoleic fatty acid. The oleic fatty acid content is significantly lower in the lipid extract of wheat crop residues, compared to corn and sunflower. On the other hand, the content of saturated fatty acids, palmitic and lignoceric, obtained in the extract of wheat harvest residues is significantly higher. No significant difference was found in the content of other fatty acids among the tested samples.
