In the juice industry, the seeds are removed as an undesirable ingredient or by product (bio-waste) in the production of raspberry juice. Inspired by the non-linear „take-make-dispose-recycle” approach, we sought to develop a strategy to valorize raspberry seeds to obtain cold-pressed oil and natural active ingredients from the oil cake that could have applications in the food and cosmetic industries. Raspberry seeds contain a considerable amount of oil (10-23%) and are used for oil extraction by cold pressing. The composition of fatty acids was studied by gas chromatography of methyl esters, as well as the oxidative stability of the extracted oil using the Oxitest apparatus. After cold pressing, the oil cake, which is also a by-product, was used to extract the bioactive components. For this purpose, different solvent combinations were used to find the most efficient „green” extraction procedure. The results of total polyphenol content and antioxidant activity were used to select the most efficient extractant.
