The present article presents the sorption properties and quality requirements of dried thyme. It is known that during long-term hydrothermal attack on the product at a constant relative humidity and temperature of the environment, the temperature of the product equals the temperature of the environment, and The partial pressure of water vapor at the surface of the product equala the partial pressure of water vapor in the environment, i. e. dynamic equilibrium is established; At this time, the product absorbs as much moisture from the environment as it gives out. The moisture content of the product at the moment of dynamic equilibrium, is called moisture equilibrium. The latter makes it possible to form moisture sorption isotherms, according to which it is possible to determine the forms of moisture connection with the product and to determine whether the dried product gives moisture during the storage process or absorbs it from the environment.
