An important and very necessary protein for the human body is collagen. Several types of collagen have been described in human tissues and in most cases their molecular structures have been elucidated. To date, attempts are being made to understand why collagen molecules are unique and the relationship between their structure and function. It is classified according to its genes and the chains that create them are XXIX in number. Most of the human body's proteins are held by collagen. Because of this it is necessary to be synthesised and accumulated in large quantities both during growth and during tissue damage. Collagen holds a large percentage and is very active in terms of remodelling or rebuilding tissues such as bones. Collagen extraction involves two key steps: a) pretreatment of the raw material; and b) extraction of collagen. The most important extraction methods are also described, such as extraction by acid solubilisation, extraction by salt solubilisation. The global collagen market size has been valued at ~$4.27 billion.
